I should have written yesterday last night. However, my husband kept reminding me we are getting up early we have a long drive tomorrow.
I didn’t do much of anything. I took out my meat recipes and thought just separate the into piles how hard could that be? Veal, ham, beef , pork. Oh but wait.
Pork is not just chops, which are bone-in or boneless, there is pork shoulder, pork ribs but they come baby back and short, then ground oh and the most recipes pork tenderloin!
But wait, beef how difficult can that be? Steak, oh no there’s port-house, sirloin, t-bone, and ground in many degrees, then chuck roast. You get the idea. It was way more involved than I thought. And no this did not include chicken a category of its own. This took more time than I expected.
I put it all away we leave tomorrow. El bought an engine monitor a male toy for the truck so he was engrossed with it the whole day.
Dinner I made a recipe of pork boneless chop with a balsamic onion sauce. However, I had made a great sauce with prunes..really! I had left over sauce and put it in Yummo!

Get up it’s 6:30am! We gotta get going! I am not an early bird person! I groan and get up to do my stretches. I am worried I am going to need the latest thing a new hip! When I step on my right foot my hip hurts. I’m doing my physical therapy exercises hoping they will help. This is the world of osteoarthritis!
We hurry thru our morning chores. The outside stuff is his the inside is mine. You have to be precious as to where each things go because we have 4 slides so nothing can be in their way! So here is what it looks like when it’s all put away (can’t get picture to load😫
At 9:30am we pull out of the campground. We stopped at flying J for gas.They have tanks off to the side for RVs. They have real good coffee and if you buy their mug and get their program it’s usually $1.00 for a 24oz mug!
It was a long ride all along 95. We passed South of the Border and they have all new signs. You could not miss it before but now the sign is 3 dimensional!
It was A very long ride we pulled in around 4:30pm. Luckily we didn’t have to unhook the truck. We are leaving in the morning for another long day. We are tired so for dinner I dug out the left overs.
